As far as I know, the majority of pokemon on the defensive lists (and sweeper ones too) are already showing max defensive stats.
In the example of Poliwrath: the reason why the EVs don't add up is as follows (I'm talking about the fully sweeper one right now, because the other one DOES add up to 510): it uses a spread like 4 HP/252 Atk/252 Speed, but since Speed is of no importance in that particular list (it just clogs things up) I chose not to include it. So the EVs do add up to 510, you just can't see some of them, since they're not of any significance to the list that Poliwrath is in.

Zapdos is listed a couple of times, there were others, I only listed Poliwrath because the I thought the EVs don't apply to the stats properly, which they do.
The reason I split up Zapdos is because Zapdos isn't usually a mixed tank (or whatever you'd like to call it): it's either fully defensive or fully special defensive as far as I know. Therefore, it's required you know both his max Def andSpDef, since it can be either one of the two, but it is also handy to know the minimum of one of his defensive stats, since it's possible you face on with 0 (Sp)Def EVs. Although it's not the best thing to base your calculations on, it could still prove to be useful to know.
