My text used to be fine, but now I have to turn the text size up to its max, around 1200, just to see it and even then it's really small.  It has to to do with my settings, I'm sure, which not only did I not change but I don't even know how. 

Maybe it's the type of font you're using. Most fonts vary in sizes.

I tried them all.  Highlighted the text and changed the font type, and every single one of them not even a pixel wide.  Whole words in three pixels.  I don't think its a problem with the font type.

Nevermind, the problem worked itself out in the end.

If you ever come across problems with settings and all that and can't figure out what you changed again, just delete the preferences file in your photoshop folder and restart photoshop. It'll re-create the file with the default settings and your problems will most likely be solved.
