Any Final Fantasy game, I think VIII was the best but that's because it was the first one I played. VII was ok but it didn't exactly stand out. I didn't get very far on it though. I may play it again soon.
I also like to play Tony Hawks Underground 2 for playstation 2. The online play is exceptionally addictive and it makes a change from the usual realistic sports games.

The legend of zelda: link to the past and ocarina of time(one of the best rpg games ever made)

The king of fighters 2000/2001
Resident evil Code veronica x(awaiting the arrival of RE4 for ps2)
FIFA Soccer 2002
Metal Gear Solid Series
Tenchu: wrath of heaven
Hitman 2 and contracts(awaiting the arrival of blood money)
I think I'm missing a few games but thats basically the whole list.
